做(zuò )法:春笋(sǔn )切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖(gài )上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干(gàn )的时候加(jiā )入盐,翻炒(chǎo )均匀稍(shāo )收(shōu )汁时(shí )盖上锅盖焖。
