做法:洗净宰好鲫鱼,洗(xǐ )净淮(huái )山和薏米。用清(qīng )水把陈皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在锅上擦(cā )一遍(biàn ),放(fàng )两勺(sháo )油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清(qīng )水,放入煎(jiān )煮好的鲫鱼和其(qí )他材(cái )料,武火煮沸,转中(zhōng )小火煲(bāo )一个半小时,下盐调味即可品尝(cháng )。
