做法:春(chūn )笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成(chéng )段(duàn )。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩(yǎn )住春笋,盖(gài )上锅盖(gài )大火煮开后(hòu )转中火。煮到水快熬干的时(shí )候加入盐(yán ),翻炒均匀稍收汁(zhī )时盖(gài )上锅盖焖。
