做法(fǎ ):春笋切成片后加少许盐(yán )捞出(chū )后用(yòng )清(qīng )水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春(chūn )笋,盖(gài )上(shàng )锅盖大火煮(zhǔ )开后(hòu )转中(zhōng )火。煮到水快熬干的时候加入盐,翻(fān )炒均(jun1 )匀(yún )稍收汁时盖上锅盖焖。
