做法:春(chūn )笋切成片后(hòu )加少许盐捞(lāo )出后(hòu )用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右(yòu )。再(zài )加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量(liàng )清(qīng )水半掩住春笋,盖上锅盖大(dà )火煮开后转(zhuǎn )中火。煮到(dào )水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅(guō )盖焖。
