做法:春笋切成片(piàn )后加(jiā )少许盐捞出后用(yòng )清水浸泡(pào ),生姜切片,葱切(qiē )成段。锅(guō )烧热,倒(dǎo )入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半掩住春笋(sǔn ),盖上锅盖(gài )大火煮开后转中火。煮(zhǔ )到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
