做法:春笋切成片后加少(shǎo )许盐捞出后用清(qīng )水(shuǐ )浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春(chūn )笋、牛(niú )肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝油(yóu )翻炒均匀,加(jiā )入少量清水半掩住春笋,盖(gài )上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍(shāo )收汁时盖上(shàng )锅盖(gài )焖。
