做法:春笋切成片后加(jiā )少许盐捞出后用清(qīng )水浸(jìn )泡,生姜切(qiē )片,葱切成段。锅烧热(rè ),倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀(yún ),加入少量清(qīng )水半掩住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到(dào )水快熬干的时(shí )候(hòu )加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
