做法:春笋切(qiē )成片后加少许盐(yán )捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀(yún ),加入少量清水半掩住春笋,盖上(shàng )锅(guō )盖(gài )大(dà )火煮(zhǔ )开后转中(zhōng )火。煮到水快熬干的时候(hòu )加入盐,翻炒(chǎo )均匀(yún )稍收(shōu )汁(zhī )时盖上锅(guō )盖焖(mèn )。
