做法:春笋切成片后加少许盐捞出后(hòu )用清水浸泡(pào ),生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段(duàn )翻(fān )炒1分钟左右(yòu )。再(zài )加入(rù )生抽、老抽、蚝油翻(fān )炒均匀,加入少量清(qīng )水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火(huǒ )煮开后转(zhuǎn )中火(huǒ )。煮到水(shuǐ )快熬(áo )干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖。
