做法:春笋(sǔn )切成片(piàn )后加少许盐捞出后(hòu )用清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再(zài )加入生(shēng )抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬(áo )干的时候加(jiā )入盐,翻炒均匀稍(shāo )收汁时(shí )盖(gài )上锅盖焖(mèn )。
