做法:洗(xǐ )净(jìng )宰好(hǎo )鲫(jì )鱼,洗(xǐ )净淮山和(hé )薏米。用清水把陈皮(pí )泡软,拍裂一(yī )小块姜,热(rè )锅,用姜块在锅(guō )上擦一遍,放两勺油,待油六成热下鱼(yú ),煎至(zhì )微黄。煮沸瓦(wǎ )煲(bāo )里的清水,放入煎煮好的鲫鱼和其他材料,武火煮沸,转(zhuǎn )中小火煲一个半(bàn )小(xiǎo )时,下盐调(diào )味即可品尝。
