做(zuò )法:春笋(sǔn )切成片后加少许(xǔ )盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅烧热,倒入2勺油(yóu ),放(fàng )入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均(jun1 )匀,加入少量清(qīng )水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮(zhǔ )开(kāi )后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒均匀稍(shāo )收汁(zhī )时盖上锅盖焖。
