做法:春(chūn )笋切成(chéng )片后加少许(xǔ )盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅(guō )烧(shāo )热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽(chōu )、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入少量(liàng )清水半掩住春笋,盖上锅(guō )盖大(dà )火煮开后转中火。煮到水(shuǐ )快熬干的时候(hòu )加入(rù )盐,翻炒(chǎo )均匀稍收汁时盖上(shàng )锅盖焖。
