做(zuò )法:洗净宰(zǎi )好鲫鱼,洗净淮山和薏米。用清水(shuǐ )把陈(chén )皮泡软(ruǎn ),拍(pāi )裂(liè )一小(xiǎo )块姜,热锅,用姜块在(zài )锅上擦一遍,放(fàng )两勺油(yóu ),待油六成热下鱼(yú ),煎至(zhì )微黄。煮沸瓦煲里的清水,放入煎(jiān )煮好的鲫鱼和其他材料,武火煮沸,转中小火煲一(yī )个半小时(shí ),下盐调味即可品尝。 -
