做法:洗净宰好(hǎo )鲫鱼,洗净淮山和薏(yì )米。用清水把(bǎ )陈皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在(zài )锅上(shàng )擦一遍,放两勺油,待(dài )油(yóu )六成热(rè )下鱼,煎至(zhì )微黄。煮沸瓦煲里的清水,放入煎煮好(hǎo )的鲫鱼和其(qí )他(tā )材料(liào ),武火煮沸,转(zhuǎn )中小火煲一个半小时,下盐(yán )调味即可品尝。
