做法:洗(xǐ )净(jìng )宰好鲫鱼,洗净淮山(shān )和薏米。用清(qīng )水把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上擦一遍(biàn ),放两勺油,待油(yóu )六成(chéng )热(rè )下(xià )鱼,煎至微黄。煮沸瓦煲(bāo )里的清水,放入煎煮好的鲫鱼和(hé )其他材料,武火煮(zhǔ )沸,转中小火煲一个半小(xiǎo )时(shí ),下盐调(diào )味(wèi )即(jí )可品尝。
