做法:春笋切成片后加少(shǎo )许(xǔ )盐捞出后(hòu )用清水浸泡,生姜切片,葱切成段。锅(guō )烧(shāo )热,倒入2勺油,放入(rù )生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左(zuǒ )右。再加入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加(jiā )入(rù )少量清水(shuǐ )半(bàn )掩住春笋,盖(gài )上锅盖大火(huǒ )煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
