做(zuò )法(fǎ ):春笋切成片后加(jiā )少许盐(yán )捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生(shēng )姜(jiāng )、春(chūn )笋(sǔn )、牛(niú )肉片、葱(cōng )段翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开(kāi )后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
